गोवा में हमारे बचपन के दौरान, बेकर (पाव बनाने वाला) हमारा मित्र, संगी व पथ-प्रदर्शक हुआ करता था। वह दिन में कम से कम दो बार तो आता ही था। एक बार तो तब जब वह प्रातःकाल में अपनी बिक्री के लिए चक्कर लगाने रवाना होता था, और फिर पुनः तब जब वह अपनी विशाल टोकरी को खाली करने के पश्चात् लौटता था। उसके बाँस की झंकृत धम्म-धम्म हमें नींद से जगा देती थी और हम उससे मिलने व अभिवादन करने दौड़ पड़ते थे। ऐसा क्यों था? क्या ऐसा पाव के प्रेम के कारण था? बिल्कुल भी नहीं। पावों को तो पासकिन या बासतिन नामक घर की नौकरानियों द्वारा खरीदा जाता था। हमें क्या चाहिए था बस वे ब्रेड-चूड़ियाँ जिन्हें हम सावधानीपूर्वक चुनते थे। कभी-कभी यह विशेष प्रकार से बनी मीठी डबलरोटी होती थी (जिन्हें हम चुनते थे)।

बेकर, विशेष रूप से बने अपने बांस के लट्ठे से झैंग-झैंग की आवाज के साथ उस स्थल पर अपनी संगीतमय पहुँच से प्रवेश करता। एक हाथ सिर पर रखे टोकरी को सहारा देता और दूसरा हाथ बाँस को जमीन पर बजाता रहता। वह घर की मालकिन का 'सुप्रभात' कहकर अभिवादन करता और फिर सीधे बाँस पर अपनी टोकरी रख देता। हम बच्चों को तो हल्की डाँट से एक तरफ धकेल दिया जाता और पावों को नौकरों को दे दिया जाता।

लेकिन हम आशा छोड़ने वाले (हार मानने वाले) नहीं थे। हम एक बेन्च या मुंडेर पर चढ़ जाते और कैसे न कैसे टोकरी के अन्दर झाँक लेते। मैं आज भी उन पावों की विशेष प्रकार की सुगन्ध को स्मरण कर सकता हूँ। बड़ों के लिए पाव व बच्चों के लिए चूड़ियाँ-पाव। फिर तो हम अपने दाँतों को साफ करने या ठीक से मुँह धोने की परवाह भी नहीं करते थे। और हमें (परवाह) करनी भी क्यों चाहिए? कौन आम के पत्तों को, दाँतों की ब्रश बनाने के लिए, तोड़ने की परेशानी मोल लेता? और यह बिल्कुल जरूरी भी क्यों था? बाघ कभी भी अपने दाँतों को साफ नहीं करता था। गर्म चाय आखिरकार सभी चीजों को अच्छी तरह धो डालती है व साफ कर डालती है!

Both writers give us a picture of the baker in different forms. Lucio Rodrigues picturises ancient flourishing business of the paders while Nandakumar Kamat picturises struggling and surviving paders after Goa’s liberation. Rodrigues’ experience is personal whereas Kamat gives factual description.

The fiercely independent people of Coorg are possibly of Greek or Arabic descent. As one story goes, a part of Alexander’s army moved south along the coast and settled here when return became impractical. These people married amongst the locals and their culture is apparent in the martial traditions, marriage and religious rites, which are distinct from the Hindu mainstream. He came up to their window and asked, “Chai, sa’ab?”

“Give us two cups,” Pranjol said.

They sipped the steaming hot liquid. Almost everyone in their compartment was drinking tea too.

“Do you know that over eighty crore cups of tea are drunk every day throughout the world?” Rajvir said.

“Whew!” exclaimed Pranjol. “Tea really is very popular.”

Pranjol, who had been born and brought up on a plantation, didn't share Rajvir's excitement.

"Oh, this is tea country now," he said. "Assam has the largest concentration of plantations in the world. You will see enough gardens to last you a lifetime!"

"Well, there's the one about the Chinese emperor who always boiled water before drinking it. One day a few leaves of the twigs burning under the pot fell into the water giving it a delicious flavour. It is said they were tea leaves."

"Tell me another!" scoffed Pranjol.

"We have an Indian legend too. Bodhidharma, an ancient Buddhist ascetic, cut off his eyelids because he felt sleepy during meditations. Ten tea plants grew out of the eyelids. The leaves of these plants when put in hot water and drunk banished sleep.

“Tea was first drunk in China,” Rajvir added, “as far back as 2700 B.C.! In fact words such as tea, ‘chai’ and ‘chini’ are from Chinese. Tea came to Europe only in the sixteenth century and was drunk more as medicine than as beverage.”

The train clattered into Mariani junction. The boys collected their luggage and pushed their way to the crowded platform.

Pranjol’s parents were waiting for them.

Soon they were driving towards Dhekiabari, the tea-garden managed by Pranjol’s father.

An hour later the car veered sharply off the main road. They crossed a cattle-bridge and entered Dhekiabari Tea Estate.

On both sides of the gravel-road were acre upon acre of tea bushes, all neatly pruned to the same height, groups of tea-pluckers, with bamboo baskets on their backs, wearing plastic aprons, were plucking the newly sprouted leaves.

Pranjol’s father slowed down to allow a tractor, pulling a trailer-load of tea leaves, to pass.

“This is the second-flush or sprouting period, isn’t it, Mr Barua?” Rajvir asked. “It lasts from May to July and yields the best tea.”

“You seem to have done your homework before coming”, Pranjol’s father said in surprise.
